I would like a version of this that could switch GPUs before booting into an OS, if anyone wants to take a stab at that.

You could try this https://github.com/Redecorating/efi-gpu-power-prefs but it does require a reboot after you run the efi executables (Once you get to the bootloader, its already using the display so a gpu is already connected)

another option would be to write an version of the linux apple-gmux module as an efi executable, but that would only work on older macs
